They are called as such because of the way how they are made that is by “dropping” a spoonful into the baking sheet. A variation that has a jam filling or a chocolate chip is widely common and is accepted widely.
  • Filled cookie – the Hamantashen is an example of a filled cookie, this type of cookie is made from rolled cookie dough filled with fillings such fruit, jam or other confectionery filling before it is baked.
  • Molded cookies – Snickerdoodles, peanut butter cookies, biscotti are example of this cookie. This cookie is made from a stiffer dough that is molded into balls or cookie shapes by hand before it is baked.
  • No-bake cookies – Oatmeal clusters, rum ball are example of this kind of cookie. It is made by mixing a filler like cereal or nuts into a melted binder then shaped into cookie or bars then cooled to harden.
  • Pressed cookies – Spritzgeback is an example of this kind of cookie, it is made from soft dough pressed out from a press.
  • Refrigerator cookies – Pinwheel cookies is an example of this kind of cookie, it is made from a stiff dough that had been refrigerated to make the raw dough stiffer before cutting and baking.
  • Rolled cookies – Gingerbread man is a classic example of this kind of cookie, it is made from a stiffer dough that is rolled out and cut into shapes.
  • Sandwich cookie – Oreo is a classic example. It is a kind of cookie that is assembled like a sandwich then filled with either marshmallow, jam, vanilla and icing.
